The population of Paris at the beginning of the 19th century was 500,000; by the end, it was 3.5 million. The reason? Great Parisian cafes, filled with Parisian breads and pastries, all attractively purveyed in glass-fronted boutiques along the newly-built boulevards flanking grand (and also new) Parisian parks, all the masterplan of Napoleon III and his civic planner, Baron Haussmann.
